Hometown Recipes: Steamed Asparagus with Lemon Butter

Yesterday was a work-in-the-yard day for me. I finally had the time to clean out the vegetable garden of last year’s growth. It was satisfying to see all that lovely dirt sans weeds and snails that had been hiding under the dead tomato plants.

As I stood back and admired my efforts, I realized that it was almost five o’clock and I didn’t have a clue what to make for dinner! My two younger children and I had decided that it was a nice evening to bbq and eat our meal outside. We chose chicken to put on the grill, asparagus and artichokes to have as our veggies. I made lemon butter for the asparagus, and we ended up using it for the artichokes as well….delicious!

This is ridiculously easy and only takes a few minutes to prepare, hope you enjoy it!

You will need-

Zester

Sharp knife

Fork

2 tablespoons butter at room temperature

1 small lemon

1 teaspoon finely minced lemon zest

1 teaspoon fresh squeezed lemon juice

24oz of asparagus, rinsed and trimmed

 

Put butter in a small bowl and mix in lemon zest and juice with the fork until well combined, set aside while you steam the asparagus

Steam the asparagus until al dente. Divide the asparagus among four plates and dollop with the lemon butter.
