    I started making this delicious Mexican chicken stew about 15 years ago. It has been the main dish for many a big party and even for Christmas Day dinner! The wonderful thing about this stew is that you can make it your own by adding different spice combinations or anything else that sounds good to you. Many people make this dish with pork instead of chicken, but this one is our favorite.

    Warning, warning, this recipe is not, I repeat, is not, low calorie! I figure that since we only eat it once a year, it’s not a problem.

    Colcannon is a very old traditional Irish dish, which consisted of smashed potatoes, cabbage and sometimes boiled ham. I have changed the recipe a bit over the years as I am  not a big fan of ham, especially boiled ham.

    altI love arugula. If you asked me what are three things I always have in my refrigerator, arugula would be one of them. I put it on my tacos...weird I know. I put it in omelets and on sandwiches too. I simply find the peppery taste irresistible. A couple of springs ago I decided to make pesto as a side for the steaks my husband was going to put on the grill.

    Long ago when I was a little girl, and I mean long ago, I would make peanut butter cookies for my friends. The recipe I used was from the Betty Crocker Cookbook that my Aunt Ethel gave me. I still have the cook book but it has definitely seen better days. The front cover is missing and it’s held together with a rubber band. Ahh, happy memories.
