Hometown Recipes: Light Waldorf Salad Served On Butter Lettuce

Macey, my 12 year old, made this delicious, light Waldorf Salad, which is served on butter lettuce as a lettuce wrap and with whole grain pita chips. It is such an easy and refreshing recipe for the warm summer nights here in the Santa Clarita summer.

3 cups chopped rotisserie chicken (or leftover chicken)

1 Granny Smith apple, cored and diced

1 Honey Crisp apple, cored and diced

2 stalks celery, chopped

½ cup raisins, currants or dried cranberries

½ cup walnuts, chopped

½ cup plain non-fat Greek yogurt

½ cup mayonnaise (light or non-fat ok)

¼ cup chopped fresh parsley

1 tablespoon fresh lemon juice

1 large head of Bibb or butter lettuce, leaves separated, cleaned and dried

7 ounce bag of whole grain pita chips

Combine chicken, apples, celery, raisins, and walnuts in a large serving bowl.  Whisk yogurt, mayonnaise, parsley, and lemon juice together in a small bowl.  Pour dressing over chicken mixture.  Cover and refrigerate for 1 hour or up to a day.  Season with salt and pepper and serve on lettuce leaves with pita chips on the side.
